Jay and his partner Silvia Sulpizio, spent 12 months in Rome and Sicily (the birthplace of Arancini!) learning the art of Italian cooking, focusing on pizza, pasta, and sauces. While there, he fell in love with Italian food.After coming back to Sydney, he spent 6 years as a pizza chef with Criniti’s and also worked in French Cuisine at Hay St Wharf Bistro. He brought all the skills and passion to Arancini and he keeps a very close eye on all aspects of the kitchen.
